ภาคเหนือ มีแกงชื่อว่าแกงกระด้าง ได้มาจากการเอาขาหมู หนังหมู มาต้มจนเปื่อย ใส่รากผักชี กระเทียม พริกไทย ข่า ลงไปดับกลิ่น เน้นพริกไทยเยอะหน่อย ต้มจนกว่าเนื้อจะเปื่อย พอต้มเสร็จ ก็เอาเนื้อและหนังหมูมายีๆ แล้วเทกลับ ลงในหมอน้พซุป ปรุงรสด้วยเกลือ หรือซีอิ๊วตามชอบ ต้มจนเดือดอีกครั้ง พักให้เย็น เทใส่ในพิมพ์ ทิ้งให้เย็น กินได้เลยครับ อร่อยด้วย ของพี่น้องอิสลามบางประเทศก็มีของกินแบบเดียวกัน แต่เคยเห็นที่เขาทำคือ หัววัวครับ เอามาต้มจนเปื่อย เหมือนกัน ใส่สมุนไพรเมือนกัน ขั้นตอนเหมือนกันหมด แต่ถ้าใครชอบแบบกรอบๆ เด้งๆ ใส่วุ้นผงลงไปได้ครับ แต่อย่าใส่เยอะไปครับ มันจะกรอบเด้งไปเลย ไม่ค่อยนุ่มลิ้น

หน้าตาแกงวุ้นวัวนี้ คล้ายแกงกระด้างของทางเหนือของไทยเลยคะ แต่แกงกระด้างมันจะเป็นหมูคะ เลยไม่เป็นที่รู้จักของชาวมุสลิมทางใต้ แต่มุสลิมทางเหนืออาจรู้จักคะแต่ก็แค่รู้จักนะคะ ถ้าจะทำกินคงต้องใช้เป็นเนื้อวัวเหมือนกันคะ หน้าตาก็คงออกมาประมาณนี้เลยคะ แต่ของไทยจะโรยผักชีเป็นหลักเลยคะ
